Chefs Claude and Thomas Troisgros selected special cuts for CT Boucherie. From lamb chops to duck magrets, as well as prime ribs, “picanhas” (top sirloin caps) and T-bone steaks, there are a total of 15 kinds of grilled meats on the menu, other than the legion of roasted dishes during weekdays that arrive on the customers’ tables with five dots of sauce upon them. Sides served in an all-you-can-eat fashion on the room are what sets the establishment apart from others; the options such as ratatouille, mashed arracacha, apple and passionfruit puree, quinoa risotto, chayote au gratin with Gruyére, “polenta” (cornmeal) with watercress, among others, change every day. For those who don’t eat meat, there is always the option of the fish of the day. An executive lunch is offered from Monday to Friday. The customer can choose between the baby beef and the meatloaf stuffed with cheese, followed by any of the sides available.
